Every time we post pictures of this summer cake we get asked for the recipe! It’s super easy because we use a cake mix for the cake and then add our favorite homemade frosting. I’ve never bothered to type it it out along with the picture but seeing how we get asked about it quite often I figured I’d go ahead and quickly type it up now.

First we start with a cake mix. I just about always use Betty Crocker’s Super Moist Yellow Cake Mix. For this triple layer cake I used two packages. Sometimes I just do a double layer cake though and use one package (I’ll post a picture of that further down in the post). I just make the cake according to the instructions on the package. If I am making a triple later cake I usually have a little bit of batter left over and just use that to make a few cupcakes. I bake the cakes and cupcakes according to the instructions and then let them cool.

Once they cool I make the frosting. This was one of my two favorite frostings my mom always made growing up and I use it all of the time!

Cream Cheese Frosting:

3 tablespoons butter
4 to 5 ounces cream cheese
1 teaspoon vanilla
1/2 tablespoon maple syrup (I sometimes to a full tablespoon – I love the flavor it adds)
3 cups confectioners sugar

Soften butter and cream cheese, then add the rest of the ingredients until texture is nice and smooth. Depending on how much icing you like you might want to make a little extra frosting. We like a lot frosting in our cakes. For a triple layer cake where I am making rosettes on top I double the above recipe!

I frosted my cake using this method (and you can find my favorite chocolate frosting recipe in that post as well). Then I just sprinkled on some blueberries. See, I told you it was easy! Now it’s time to dig in!

Here’s another picture of it:

And here’s a picture of a two layered version that doesn’t have any rosettes which makes it even easier to make:

And here’s a version of the exact same cake but without the blueberries and rosettes are covering more of the cake:

And here’s the same frosting used on a pumpkin cake (you can find that recipe here):

I told you it’s my favorite frosting! I’ve tried quite a few other buttercream and cream cheese type ones over the years but always come back to this one – it is my absolute favorite!

I hope you have a wonderful week and are enjoying your summer!

Warmly, Jenni
