We’ve gotten Ruby a special treat for each of her last two birthdays so with Teddy’s first birthday and Ruby’s third on the horizon, a few weeks ago we started looking on Pinterest for some recipes to make our own little cakes for them. We ended up mixing a couple of different recipes together. Ruby turns three tomorrow and Teddy is a rescue so we don’t know when his birthday is. We were told it was most likely May or June so we figured this weekend was a good time to bake some pupcakes and celebrate both of them!

For the cake base we more or less used this recipe from Broma Bakery (who has the best dessert recipes – go check them out!),  but we altered the measurements a bit and roughly used this amount:

  • 1/2 cup vegetable oil
  • 1 1/2 cups pumpkin puree
  • 3/4 cup peanut butter
  • 3 eggs
  • 1 1/3 cup flour
  • 2 teaspoon baking soda

We mixed the wet ingredients first and then added in the dry and then put them into two greased 8″ round pans and cooked them at 350 degrees for about 15 minutes.

We decided to make a cream cheese and peanut butter frosting and used roughly these measurements:

  • 8 oz cream cheese
  • 1 C peanut butter
  • 2 Tbsp milk (start with just a tiny bit and then add as much as you need to get the consistency that you like)

This made more frosting than we needed but we just added some confectioner’s sugar to the leftovers and it made a heavenly frosting for all the humans in our family – haha!

I used a round cutter to cut three round shapes (although we just did two on Teddy’s). This is a messy cell phone pic but you can see the idea here:

Then we just stacked and iced them and added a few dog bones for embellishment! And we saved all the cake scraps for them for snacks for the next week or so!

We put three candles for Ruby and one for Teddy and blew up a few balloons for them too.

Ruby devoured it! (Actually she was devouring Teddy’s in this picture – haha) We put a halt on it though so she would’t get a stomach-ache from overeating and saved the rest of later. To say she loved it would be an understatement!

Teddy was a bit more unsure of it – haha! He did enjoy it though. Just not with the intensity that Ruby did!
